Korean Fried Chicken is “slow fried” (I dunno) and without batter in a way that renders a lot of the fat out of the skin but keeps it super crispy. with the fat rendered out, there’s a layer of air (sorta) before the chicken, so it stays super tender and moist. the sauce is usually soy/garlic...
